Valentine’s Day during a pandemic certainly does not need to be boring and although you will need to celebrate with your loved ones at home this year, three of our favourite luxury hotels have created a selection of easy cocktails for you to make.

 

KILKEA CASTLE CUPID’S HOPE

Kilkea Castle is a luxury hotel resort and golf club in County Kildare, Ireland that was voted in the top 5 of Condé Nast Traveler’s 2019 Reader’s Choice Awards. Kilkea Castle’s master mixologist David Pedro created a special drink that inspires l’amour and includes local products and the castle for inspiration. Named the Cupid’s Hope, this original drink promises to make any celebration more romantic and fun!

Ingredients:

90ml of Ballykeefe Vodka (or premium brand)
30ml of Amaretto
180ml of Cranberry Juice
30ml of Vanilla Essence
Wild Cherries & Love Heart Candy
Optional – granulated sugar

Method:

  1. Combine ingredients with a scoop of Ice in cocktail shaker
  2. Shake for 10 seconds
  3. *Optional – wet rim of martini glass then dip into granulated sugar
  4. Strain contents into a chilled martini glass
  5. Garnish with Wild Cherry and Love Heart Candy

 

MANDARIN ORIENTAL PARIS LOVE POTION

The team at the luxury five-star hotel Mandarin Oriental, Paris has created the Love Potion Cocktail for Valentine’s Day this year. This is a simple cocktail that anyone can create no matter your cocktail making skills (or lack thereof).

Ingredients:

40ml Raspberry Puree
20ml Chambord liqueur
Champagne

Method:

Mix together 40ml of raspberry puree, 20ml of Chambord liqueur and top up with Champagne.

 

GLENAPP CASTLE BRAMBLE PASSION

A 17-bedroom luxurious Relais & Chateaux hotel, Glenapp Castle is tucked away on the breath-taking Ayrshire coast, Scotland. With an array of delicious cocktails on offer, each concoction is totally unique and full of aromatic flavours. Glenapp’s Bramble Passion is the perfect Valentine’s cocktail with its crimson red colour and sweet raspberry flavour.

Ingredients:

150ml Hendrick’s Gin
100ml Lemon Juice
50ml Sugar Syrup
50ml Raspberry Liqueur
200ml Soda Water

Method:

  1. Pop the gin, lemon juice, sugar syrup and raspberry liqueur into a glass jug
  2. Add in small amount of ice and stir briskly
  3. Fill glass jug full of ice and stir briskly again
  4. Top with soda water and serve in a long glass or a flute
  5. Garnish with raspberry and lemon wheel
